Pay as you can bakery is the icing on top of the cake for Birmingham!

I visited Lil's Parlour CIC Birmingham's first award winning pay as you can bakery in Northfield and interviewed founder and director Lucy Scott to find out more.

It was lovely to visit Lil’s Parlour CIC in Northfield, Birmingham where I interviewed Lucy Scott who is the founder and director of the pioneering pay as you can bakery offering delicious treats made in-house and aims to put a smile on every customers face by putting people before profits.

Every week Lucy sees what ingredients are available for her to bake with and makes items such as her popular "Wagonish Wheel" as well as "Cruffins" and serving "French style Hot Chocolate" which I have to say having sampled many hot chocolates this was one of the best I had ever tasted.

Pay as you can means no customer is turned away if they are short of cash to purchase Lucy’s treats in a non-judgemental way, each item has a recommended donation however you're not obligated to pay this and can pay less or more.

Through difficult economic times the economy is facing Lucy tries her very best to be there for her local community by offering this positive service and not letting price increases such as eggs, butter, flower and electricity stop her from doing something which she loves.

Lucy told me how she doesn’t want to just live in a society of chains and supermarkets and would like to see more survival of small businesses and CIC’s and is creative with her welcoming store and products.

Advise Lucy would give to young people wanting to start a business is not to rush into things and I agreed with her that it’s important to think things through such as business decision making and she has always been an advocate of giving young people a chance.

Lucy crowd fundraised for her Happiness Van: "Audrey" where people showed their generosity of supporting Lucy’s mission to get a van on the road so she can bring Lil’s Parlour on the move to more people to enjoy.
